Today was a sad day as the Riggs Family realized that both Southeast Asian Cousine and Maranatha Mexican Grill are CLOSED! Okay, so for ya'll who are not Eagle Mountainers, there are only two other places to eat in our small little city. Village Pizza, which we LOVE and Wasatch Deli, which is great, but not always the most economical choice. Yes, there are places in Saratoga which are only 7 minutes away, but it's nice to have more options right around the corner.
With that said, I'm feeling a bit crappy today. I had an extremely busy week with 7 hours or less of sleep each night and on top of that sleeping with this big belly is getting much more difficult and my back often aches. So, my amazing husband is running all over the great West in search of carryout so I don't have to cook. And he's running to WalMart for me too. I love that man! Now I need to go text him my list. Hope your Saturday evening meal is going more successfully than ours ;)

Speaking of takeout, have you tried Costco's rotisserie chicken? If you don't like meat on the bone, just have Adam cut it off. It's heavenly! I try to buy one every time I go there and it lasts us 2 or 3 meals for $5!!!
Talk about easy - on salad or sandwiches or tortillas or plain. So yum! We only went to Maranatha 1x & weren't impressed. We go to Wasatch once a month or so. Yes, they're pricey, but they'll make any sub a salad so I can eat it. I've never been to Village Pizza - do they have anything I could eat?!? Hang in there!
yea we went about 4 months ago and realized the asian place was closed. hehe its been closed for a while now... it isnt fun when you want take out that is yummy and it is closed. no fun.
Oh sad! I love the mexican place. Josh is going to be big time bummed when he gets home cause he likes it too. Hopefully some more places will open up around here!
You should have come out to dinner with us on Saturday, but then you would have had to drive clear into American Fork. Maybe next time.
