A farmer comes around my neighborhood a couple times a year with produce fresh from the orchard. I bought a 40 pound box of apples and oranges, so I'm looking for yummy recipes that use fresh apples and oranges (please share your favs!). I just found this recipe on Sunkist's website. It looks pretty yummy. I'm going to substitute whole wheat flour.
Orange-Honey Muffins
2 cups all-purpose flour
1 Tbsp. baking powder
½ tsp. salt
1 egg, slightly beaten
1/3 cup honey
1 Sunkist® orange -grated peel
½ cup freshly squeezed Sunkist® orange juice
½ cup milk
¼ cup vegetable oil
2 Sunkist® oranges , peeled, sectioned, and drained
1 Tbsp. sugar
To make one portion:
In a large bowl, sift together the flour, baking powder, and salt. Combine the egg, honey, orange peel, orange juice, milk, and oil; add to dry ingredients all at once.
Stir quickly until dry ingredients are just moistened but have a lumpy appearance, Spoon batter into 16 paper-lined 2-1/2 X 1-1/4-inch muffin cups, filling about two-thirds full.
Place one orange section on top of each muffin and sprinkle with sugar. Bake at 400 degrees F for 20 to 25 minutes.
Makes 16 servings
